French Onion Soup

Serves: 8

Ingredients
*Ingredients currently available at the farmers’ market
● 2½ pounds yellow onions*
● 3 Tablespoons unsalted butter
● 2 Tablespoons olive oil
● 1 teaspoon salt
● Freshly ground pepper
● ½ teaspoon sugar
● 8 cups of beef, chicken, or vegetable broth
● 3 Tablespoon flour
● ½ cup white wine*
● 8 baguette slices, toasted*
● 1½ cup to 3 cups of shredded Gruyere cheese (1/4 to ½ cup per serving)

Instructions
1. Cut onion into thin evenly-sized half-moon slices. Should yield about 6 cups of onion slices.
2. Melt butter with oil in a pan over medium-low heat.
3. After the butter foams up and then settles down, add the onions and stir to coat with the butter.
4. Cover the pan and cook for 15 minutes on low heat.
5. Remove the lid. The onions should have wilted down. Stir in salt, a generous amount of pepper, and sugar.
6. Turn the heat up to medium and cook, uncovered and stirring every few minutes, until the onions are deeply browned.
7. As the onions turn a deep walnut color, heat the broth in a separate pan.
8. Add 3 Tablespoons flour to the caramelized onions and cook, stirring for about 1 minute.
9. Add the hot broth to the caramelized onions and bring to a boil. Add wine if using. Lower the heat and partially cover the pan. Cook gently over low heat for at least 1 hour or until the broth is slightly reduced.
10. Heat the oven to 350 degrees. Divide the soup between oven-safe bowls or use a deep casserole dish. Top each with a slice of toasted baguette and sprinkle grated cheese in a thick layer over the bread and up to the edge of the bowl.
11. Place the bowls on a baking sheet or in a casserole dish, if not using oven-proof bowls. Bake until the cheese is thoroughly melted.
12. Turn the oven from bake to broil and broil the soup for 1 to 3 minutes or until the cheese is browned and bubbling. Remove from the oven and let cool for a few minutes before serving.

Notes:
Top with minced shallots, onions, or crispy bacon. Add thyme with wine and sprinkle over the soup before baking.

Hummus Toast

Serves: 1

INGREDIENTS

All ingredients are currently available at the Saratoga Farmers’ Market

  • 1 slice of thick whole grain bread
  • 1 garlic clove
  • hummus
  • 2 thin slices of fresh tomato
  • 3 thin slices of red onion
  • balsamic dressing
  • baby greens
  • micro greens and arugula

INSTRUCTIONS

  1. Before toasting the bread, lightly rub a peeled garlic clove over the toast. Toast until browned.
  2. Spread a layer of hummus on the toasted bread.
  3. Place tomato slices and red onion slices on top of the hummus. Drizzle a little balsamic dressing.
  4. Top with baby greens and micro greens and enjoy!

Farmers’ Market Cheese Board

A cheese board is easy and quick to make. Using local products and a little creativity, make an impressive display of colors and flavors.

Cheese: Arrange cheese from different kinds of milk, cow, goat, and sheep, with a variety of texture such as soft, semi-soft, and hard. Include cheeses with different colors and cut them into shapes, cubes, wedges.  Put crumbly cheeses in a small crock or ramekins. Some cheeses are best at room temperature and may need to be taken from the refrigerator an hour before serving. 

Pairs: Although cheeses can stand alone, it’s always nice to offer some pairings such as neutral flavored crackers and baguettes. 

Extras: Fill in the gaps with favorites like fresh fruit, jam, or cured meat. Even granola, bite-sized cookies, and chocolate may work. 

Put It Together: Find a large wooden cutting board, marble or slate tray, even a fancy platter. The surface shouldn’t absorb the moisture from the cheese.  Remember to include small spreaders, spoons, knives, and toothpicks. Leave enough space for your guests to pick from the items on the board.  Add some garnishes, herb, or edible flowers. Let your cheese board show your creative side.
