Whatever Soup

Serves: 6 to 8

Ingredients

  • 4 Tablespoons of olive oil
  • 2 medium onions*, sliced
  • 3 garlic cloves*, sliced
  • 6 to 8 cups diced vegetables*(carrots, celeriac, chard, mushrooms, cabbage, parsnips, potatoes, turnips, winter squash)
  • 1½ pounds raw boneless chicken
  • 6 to 8 cups chicken stock
  • Salt and pepper to taste

Instructions

  1. Set a large Dutch oven or stockpot over medium-high heat and add 4 tablespoons oil. When the oil shimmers, add onions and garlic.
  2. Reduce the heat to a medium and cook, stirring occasionally, until the onions are tender, about 15 minutes.
  3. Place the chicken and vegetables in the pot. Add enough chicken stock to cover. Season with salt and pepper. Increase heat to high and bring to a boil, then reduce to a simmer.
  4. Cook until the flavors have come together and the vegetables are tender, about 20 minutes more. Remove raw chicken from soup when cooked, allow it to cool enough to handle. Shred and return it to the soup.
  5. Add more hot liquid if needed.
  6. Serve hot.

Simple Solutions to the Dinner Dilemma

While there are usually easy meal solutions for breakfast and lunch, simple, healthy dinner ideas are no easy feat. Finding a recipe that your family will enjoy is only a part of the struggle. We crave a quick fix for dinner, something that doesn’t take hours to prep and cook, and something that won’t take an hour to clean up. The Saratoga Farmers’ Market has meal motivation and locally sourced ingredients to get you through these dinner difficulties.

Sheet Pan Dinners

For an effortless, delicious meal with minimal cleanup, sheet pan dinners are one of our favorite approaches to dinner. Choose your favorite seasonal vegetable(s) and pair it with a protein like chicken, pork, or beef. Think steak with Brussels sprouts and potatoes, sausages with apples and carrots, chicken with mushrooms and tomatoes (tomatoes will return to the market in Feb.). The internet has many ideas, and finding the right ingredients is super simple between your pantry and the farmers’ market.

Farmers’ Market Frittatas

Frittatas can be very easy to make and are a great way to clean out your refrigerator. Ingredients include eggs, vegetables, fresh herbs (optional, and returning to the market in Feb.), cheese, and bacon or sausage – or omit for a vegetarian option. Simply sautee the vegetables, add cooked bacon and herbs, pour whisked eggs over the mixture, top with cheese, and broil for 3-4 minutes. We love M&A Farm’s recipe and remember that you can put just about anything in your frittata.

Simple Soups

Soups are one of the most satisfying, healthy, and easy one-pot meals to make. Simply chop up your vegetables, sautee the aromatics (leeks, onions, carrots, garlic, but the list goes on), add chicken or vegetable stock and simmer, then puree or leave chunky depending on the soup and your preference. Some ideas are vegetable soup, potato and leek soup, mushroom soup, and butternut squash soup.

Slow Cooker & Instant Pot Meals

Slow cookers and Instant Pots have turned complicated, time-consuming meals into one-pot wonders. A quick Google search can reveal recipes for anything from tacos to pot roast to soups and stews. Once your ingredients are in the pot, you typically don’t need to pay attention to them until the meal is cooked and ready to serve.

Lamb Satay

Ingredients
*Ingredients currently available at the Saratoga Farmers’ Market
● 1 pound boneless sirloin lamb* (or whole boneless sirloin roast*, or a boneless half shoulder*)
● ½ cup soy sauce
● ¼ cup water
● ⅛ teaspoon cayenne (or to taste)
● 4 Tablespoons smooth peanut butter*
● 1 Tablespoon garlic*, minced
● 2 teaspoons ginger, grated or minced
● 1 Tablespoon lime or lemon juice
● 20 bamboo skewers

Instructions
1. Combine soy sauce, water, cayenne, peanut butter, garlic, ginger, and lemon or lime juice in a bowl.
2. Cut lamb into thin strips, and marinate for 2-3 hours. (It’s easier to cut thin strips of lamb that are frozen and haven’t completely thawed.)
3. Soak bamboo skewers in water for at least 20 minutes. Thread the lamb strips on the skewers. Put a strip of foil along the edge of the grill to protect the ends of the skewers. Grill 1-2 minutes on each side.

Variation: Marinate a boneless shoulder roast overnight, and grill to rare or medium-rare. Slice thinly.

Strip Steak with Yogurt and Radishes

Serves: 4

Ingredients
*Ingredients currently available at the farmers’ market
● 2 1-inch boneless New York Strip steaks*
● 2 Tablespoons olive oil*, plus more for drizzling
● Kosher salt
● 3 Tablespoon unsalted butter
● 4 sprigs thyme*
● 2 garlic cloves, crushed
● 6 cardamom pods, lightly crushed
● 1½ teaspoons finely grated lemon zest
● 1 teaspoon finely grated lemon zest
● 1 teaspoon plus 1 Tablespoon fresh lemon juice
● 1½ cup plain Greek yogurt*
● 8 ounces radishes*, cut into wedges and slices
● 1 cup parsley* leaves with tender stems

Instructions
1. Let steak sit at room temperature 20 minutes before cooking.
2. Heat a dry large skillet over medium-high. Rub steaks with 2 Tablespoons oil. Season generously with kosher salt. Cook, turning several times until lightly charred 6-8 minutes. Pour off excess oil from the skillet. Add butter, thyme, garlic, and cardamon, and cook steaks, tilting skillet and basting with foaming butter, until medium-rare, about 3 minutes. Transfer steaks to a cutting board and let rest 10 minutes before slicing. Reserve pan drippings.
3. Mix lemon zest and 1 teaspoon lemon juice with yogurt in a small bowl, season generously with kosher salt.
4. Just before serving, toss radishes, parsley, and the remaining 1 Tablespoon lemon juice in a medium bowl. Season with kosher salt, drizzle with oil, and toss again to coat.
5. Swipe plate with seasoned yogurt and top with steak and radishes and sea salt.

Swiss Chard and Kale Gratin

Serves: 8 to 10

Ingredients
*Ingredients currently available at the farmers’ market
● 2 pounds Swiss chard*
● 1 pound curly kale*, stemmed and cut into 1 inch wide strips
● 2 garlic cloves*, peeled
● 3 cups rustic white bread*, cut into ¾ inch cubes
● 5 Tablespoons olive oil, divided
● 1 cup Parmesan cheese
● ¾ teaspoon table salt, divided
● ½ teaspoon pepper, divided
● 1 onion*, chopped coarse
● 1½ teaspoon minced fresh thyme*
● 1 cup heavy cream
● ⅛ teaspoon ground nutmeg

Instructions
1. Adjust oven rack to upper-middle position and heat oven to 375 degrees. Stem chard, then cut stems into 2 inch lengths and set aside. Slice leaves into 1 inch wide strips. Bring 2 cups water to boil in Dutch oven over high heat. Add kale, cover and reduce heat to medium-high. Cook until kale is wilted about 5 minutes, stirring halfway through cooking. Add chard leaves, cover and continue to cook until chard is wilted, about 4 minutes longer, stirring halfway through cooking. Transfer to colander set in sink and let drain. Do not wash pot.
2. Pulse garlic in food processor until coarsely chopped, 5 to 7 pulses. Add bread and 3 Tablespoons oil and pulse until largest crumbs are smaller than ¼ inch, 8 to 10 pulses. Add Parmesan cheese, ¼ teaspoon salt, and ¼ teaspoon pepper and pulse to combine. Transfer to bowl.
3. Add onion and chard stems to now empty processor and process until finely chopped, scraping down sides of bowl as needed, 20 to 30 seconds. Transfer to now-empty pot. Add thyme, remaining 2 Tablespoons oil, remaining ½ teaspoon salt, and remaining ¼ teaspoon pepper. Cook over medium high heat, stirring occasionally, until moisture has evaporated and mixture is just beginning to brown, 8 to 10 minutes.
4. Using spatula, press gently on greens in colander to remove excess moisture. Transfer greens to pot with onion mixture. Add cream and nutmeg and stir to combine. Transfer mixture to 13 X 9 inch baking dish. Sprinkle bread crumb mixture evenly over surface. Bake until topping is golden brown and filling bubbles around edges 20 to 25 minutes. Let cool for 10 minutes before serving.

Slow-Cooked Beef Shank with Polenta and Vegetables

Serves: 4

Ingredients
*Ingredients currently available at the farmers’ market

For beef shanks:
● 3-4 large carrots*, cut in rough cubes
● 1 large turnip, cut in medium-large cubes
● 1 medium onion*, cut into eighths
● 2 cloves garlic*, cut in large chunks
● 1 beef shank*
● 1 tbsp maple syrup*
● 1 cup of red wine*
● 1 tbsp balsamic vinegar
● Salt, to taste
● Parsley* for garnishing
● 2-3 cups water (to mostly cover meat)

For polenta:
● 1 cup dried Abenaki corn*, ground (use blender or food processor)
● 1 cup water + 3 cups water
● ½ cup mozzarella*, cubed
● 1 tbsp salt

Instructions
1. Lay down a thin layer of onion, carrot, and turnip. Place the shank on top of that. Fill in around the sides with the remaining onion, carrot, and turnip to fill the crock pot.
2. Sprinkle garlic on top and pour red wine on meat. Then splash balsamic vinegar and maple syrup on meat. Add salt and seasonings of choice (rosemary or Italian seasoning fit great) sprinkled over meat.
3. Put the crock pot on medium-low heat. Add water to cover about three-quarters of the meat. Add the lid. Leave it going for 4.5 to 5.5 hours, flipping meat and stirring veggies every hour or so. It’s done when a fork will pull away the meat from the bone without a knife.
4. For the polenta: Combine a cup of cornmeal with 1 cup of water in a bowl and stir together into a paste. Bring the other 3 cups of water to a boil and add a tablespoon of salt.
5. Once the water is boiling, add the corn paste to the boiling water. Stir around with a wooden spoon and try to keep it from sticking to sides. Turn heat to medium and keep it at a low boil. After 5 or so minutes of intermittent stirring it should be one mass.
6. Add in mozzarella, continue stirring for 1-2 minutes and turn off the heat once the chunks start to melt in. Leave it on the hot burner for 5-10 minutes to dry out a little more. Done when set.
