Obatzda (Bavarian beer cheese spread)

Recipe adapted from Craft Beering
Yield: 6 portions

Ingredients
*Ingredients currently available at the farmers’ market
● 8 oz camembert*, cut in small pieces (or other soft, ripe cheese)
● 8 oz spreadable cheese*, any kind
● ⅓ cup butter, cut in small pieces
● 2 ½ tsp paprika
● 2 tsp ground caraway seed
● Salt and pepper, to taste
● ¼ cup Sixteen Days Oktoberfest beer* (or other lager or pilsner)
● ⅓ cup shallots*, finely diced
● 2 Tbsp + 1 handful scallions*, finely chopped

Instructions
1. Bring the camembert, spreadable cheese, and butter to room temperature.
2. In a mixing bowl, add the two cheeses, butter, paprika, caraway seeds, salt and pepper, and 2 Tbsp of beer and press using a fork until well mixed together. Add more beer until you reach a spread-like, but not runny, consistency.
3. Cover and refrigerate for at least 3 hours to firm up.
4. When you are ready to serve, take the dip out of the refrigerator. Run the diced shallots under water in a strainer and dry off with a paper towel before using. Add the shallots and 2 Tbsp of scallions to the dip and fold until they are well incorporated.
5. Garnish with the rest of the scallions. Serve with pretzels, radishes, or rye bread.

Pumpkin Dip

Makes: 5½ cups

Ingredients
*Ingredients currently available at the farmers’ market
● 2 cups confectioner’s sugar
● 1 teaspoon nutmeg
● 1 teaspoon cinnamon*
● 16 ounces cream cheese, softened
● 2 cups pumpkin puree (see puree instructions below)
● Apple slices*, graham crackers, ginger snaps, or tea cookies* for serving

Instructions
Mix together the sugar and spices. Whip together with the cream cheese and pumpkin puree. Refrigerate until firm. Serve with apple slices, graham crackers, or ginger snaps.

Notes: Sift the confectioners’ sugar to avoid lumps.

To make your own pumpkin puree: Heat oven to 375 degrees. Cut a medium-sized pumpkin in half from top to bottom, remove the seeds and pulp. Place the halves cut-side down on a parchment paper-lined baking sheet. Roast until easily pierced, 45 to 60 minutes. Turn over the pumpkin and continue to cook for another 30 minutes. Allow to cool enough to handle. Scoop out the flesh and puree in a food processor. Drain puree in a fine-mesh strainer over a bowl for 1 hour or more. It will keep in the refrigerator for up to four days.

Green Herb Yogurt Dip

Makes 6 servings

Ingredients
*Ingredients currently available at the farmers’ market
● 2 cups plain Greek yogurt* (or full-fat plain yogurt*)
● 3 tablespoons finely chopped fresh mint*
● 3 tablespoons finely chopped fresh parsley*
● 1 tablespoon finely chopped fresh dill*
● 2 cloves garlic, grated
● Zest of 1 lemon plus juice of 1/2 lemon
● Kosher salt and freshly ground black pepper

Instructions
Combine the yogurt, mint, parsley, dill, garlic, lemon zest and juice, 1 teaspoon salt and 1/2 teaspoon pepper in a medium bowl and mix well; taste to check the seasonings. Cover tightly and refrigerate until ready to serve.

Notes
● Storing: You can make this ahead and refrigerate for 3-4 days. Do not freeze.
● Variations: Mix and match herbs however you like by adding fresh chives, tarragon, or basil. You can also substitute apple cider vinegar for lime juice. If you want to add some heat to this dip, add a fresh jalapeno. Half the jalapeno, remove the seeds and ribs and chop finely.
● Using this dip: Dip in fresh veggies such as carrots, cucumbers, and cherry tomatoes. If you love making salads, toss your greens in this dressing. Try using as a sauce for kebabs, grilled meat, or poultry. Or use as a topping for grilled vegetables or burrito bowls.
