Sugar Snap Peas with Garlic and Mint

Serves: 4

 

Ingredients

*Ingredients currently available at the Saratoga Farmers’ Market

  • 2 garlic cloves*, minced
  • 1 Tablespoon olive oil*, plus 2 teaspoons olive oil*
  • ¼ teaspoon crushed red pepper flakes
  • 1 pound sugar snapped peas*, trimmed
  • ¼ cup chopped fresh mint*
  • Fresh lemon juice
  • Sea salt flakes

 

Instructions

  1. In a small bowl, combine the garlic, olive oil, and red pepper flakes. Heat the 2 teaspoons of olive oil in a large skillet over medium-high heat. Add the snap peas and cook without moving until blackened in spots, 2 to 3 minutes. Take the skillet off the heat, add the garlic mixture and stir until fragrant, 15 to 30 seconds. Transfer to a serving bowl, toss with the mint and season to taste with lemon juice and salt.

Hearty Radish Greens Salad

This salad is a balance of flavors and textures. Radish greens provide body and earthiness and a bit of bite, apples offer sweetness, scallions some slight tanginess, and the garbanzo beans and cucumber are mellowing. Also, Radish greens offer six times more Vitamin C than the actual radish! They are rich in calcium and potassium, full of antioxidants, and act as a powerful digestive aid.

INGREDIENTS 

*Ingredients currently available at the farmers’ market

  • Greens from 2 bunches of radishes*
  • 1 teaspoon of mashed or crushed garlic* with a pinch of salt
  • 1/2 cup of extra-virgin olive oil*
  • 1/4 cup of fresh lemon juice
  • 1 cup of apples*, chopped
  • 3 purple or white scallions*, finely chopped
  • 1 cup of cucumbers*, chopped
  • 1 can of cooked garbanzo beans

Instructions

  1. Wash and dry the radish greens. Chop them coarsely.
  2. Make the dressing by mixing the garlic, lemon juice, and olive oil.
  3. Add to the radish greens the apples, cucumber, scallions and garbanzo beans. Mix and pour the dressing.

Parsnip Hummus

Total time: 20 min

Yield: 6 to 8 servings

Ingredients

*Ingredients currently available at the farmers’ market

  • Kosher salt and freshly ground pepper
  • 2 pounds parsnips*, trimmed, peeled and cut into equal-size chunks
  • 1/2 cup tahini
  • 1/2 cup extra-virgin olive oil, plus more for drizzling
  • 1 large clove garlic*
  • 1 small lemon, juiced
  • Paprika, for decorative sprinkle
  • An assortment of raw vegetables and crackers for serving: cucumbers*, cherry tomatoes*, sliced carrots*, crackers*

 

Directions

  1. Bring a large pot of water to a boil. Season generously with salt and add the parsnips. Boil until the parsnips are as soft as butter, 10 to 15 minutes. If certain pieces are still hard while others are tender, pull out the tender ones, and allow the tougher ones to cook another 5 minutes. It’s really important to cook the parsnips until they’re soft.
  2. Drain the parsnips, saving about 1 cup of the hot water. Toss the parsnips into a food processor along with the tahini, olive oil, garlic, lemon juice and 1/4 cup of hot water. Puree until smooth. Taste for seasoning, and depending on how salty your tahini is, adjust the salt and pepper accordingly.
  3. Serve warm or at room temperature. I like to pile the hummus into a shallow bowl, forming a small pool in the middle. Pour a little olive oil into the pool and sprinkle with a little paprika. Serve alongside a platter of vegetables and crackers. Enjoy!
