Festive Foods and Flavors for St. Patrick’s Day

  In the United States, Saint Patrick’s Day has ventured from authentic Irish traditions. However, Irish emigrants transformed the holiday into the celebration we know today; prominent displays of green, festive eating and drinking, and numerous parades. 

You can find the spirit of Saint Patrick’s Day at the Saratoga Farmers’ Market. With the approach of spring, there will be plenty of green there for you, too! This Saturday at the Wilton Mall, local producers have all the goods to help you prepare for your Irish-infused festivities.

If you’re preparing corned beef, your beef brisket should be bathing in spice-filled brine. But it’s not too late to pick up locally grown essentials like cabbage, carrots, and potatoes. You can find the products you need at Gomez Veggie Ville.

Something’s Brewing recommends Sumatra roasted beans to make the best Irish coffee. Pour one and a half ounces of Irish whiskey and one teaspoon maple syrup into a mug, and fill the rest of the way with freshly brewed coffee. Stir, taste, and adjust the sweetness. Then top with whipped cream.

Pork & Greens has nutritious microgreens for fresh and festive greens. Lovin’ Mama Farm has returned with microgreens and potted herbs. And J. Adkins has a variety of succulents and houseplants to add a touch of green to your living space. 

Suppose you’re looking for other flavors with a St. Patrick’s Day flair. In that case, Saratoga Chocolate Company’s Matcha Bar has the perfect balance of white chocolate and brilliant green Wakatake matcha (green tea powder with an earthy flavor). Junbucha will have green Japanese Matcha Kombucha, a tart yet sweet fermented beverage made with high-quality matcha, tea, and honey. Goat Scape cheese from R&G Cheesemakers offers savory goat cheese flecked with green garlic scapes.

Smart gardening with starter plants

With spring’s last projected frost date safely behind us, gardening enthusiasts take out their trowels and prepare garden plots for planting. But if you’re new to gardening, the process may seem overwhelming. We spoke with Susan Beebe, Assistant Director/Agriculture Issue Leader of Cornell Cooperative Extension of Saratoga County, to understand the basics of gardening with starter plants.

To begin, determine where you would like to plant. Perhaps you have space for a garden or raised beds in your yard, or maybe planting in containers seems more feasible. If planting in the ground, Susan Beebe explains that the first and most crucial step is to determine the pH of your soil. “Soil pH is important because it will help you prepare to plant your garden,” explains Beebe. To collect a soil sample, walk through the area that you would like to plant and collect soil samples from various places. Dig 3” to 8” deep and scoop about ½ cup of soil into a clean container. Soil samples may be brought to Cornell Cooperative Extension’s Master Gardener table at the farmers’ market on the third Wednesday of every month or directly to their office.

If planting in raised beds, Beebe recommends combining potting soil and compost to hold water and prevent moisture from draining out. “Soil is alive and full of microorganisms that plants need to survive,” says Beebe. “Adding green manure, compost, or even a cover crop can keep soil healthy while planting in raised beds.”

If planting in containers, Beebe advises using soilless mixes rather than potting soil. “A benefit to the soilless mixes is that they are much lighter than potting soil and allow you to move your containers around. The counterpart is that these mixes have a tendency to dry out, so depending on the location, you may have to water your containers more,” explains Beebe.

Once your soil is ready, it’s time to buy plants. Several vendors offer various herbs, fruit, and vegetable starter plants at the Saratoga Farmers’ Market. These plants are typically several weeks old and have been nurtured through the most delicate early stages of growth by professional growers in a greenhouse. Now it’s time to plant. Once you’ve popped the first plant out of the container, pull the roots apart with your hands gently; you can look to see how tightly wound the roots are. “You need to pull the roots apart with your hands gently,” Susan Beebe instructs. “You may even use a little knife to break the roots because the goal is to stop their circling motion so that they can spread into the ground,” she adds. When planting, maintain the level it was grown at rather than planting deeper. “The only exception is leggy tomato plants that you can bury deeper,” says Beebe.

Once your starters are planted, water generously and ensure 6+ hours of sunlight a day. Some leafy crops like spinach can thrive with less sun; however, vegetables like carrots, beets, and peppers need 6+ hours a day.

Fruit and vegetables thrive and produce more with light fertilizing at planting. The appropriate fertilizer depends on how you’re growing and what your growing. Beebe recommends side-dressing again with fertilizer 2-3 weeks after planting to ensure healthy, productive plants.

CSAs help us invest in food and farms

This time last year, we learned that a secure food supply could suddenly turn into shortages. Buying from local farms, which have a much shorter supply chain, is a great way to be assured of getting freshly harvested, quality food. Community Supported Agriculture (CSA) provides an even better guarantee.

By purchasing a CSA, customers make an early investment to help farmers get their season started, quite literally giving them seed money. Then, CSA members reap the harvest season’s benefits by receiving produce at a discounted price. Saratoga Farmers’ Market’s Wednesday and Saturday outdoor markets, which begin in May, will offer several CSA options.

Owl Wood Farm is one of the farms offering CSA subscriptions. They have traditional ‘Box Shares’ that run for 20 weeks, starting in June, for $450. Each share has a salad green, a cooking green, a root crop, an herb, a type of onion, and seasonal items, like strawberries, beans, or summer squash. The ‘box share’ is an excellent option for weekly shoppers who like variety and enjoy creative cooking. A second option is the ‘Market Share’: customers get “Owl Bills” to use at the farm’s stand whenever and for whatever they want. Any prepaid dollar amount over $200 receives a 10% credit added to it. Customers may purchase shares on Owl Wood’s website or learn more at the market when they return in late April.

Gomez Veggie Ville is also offering vegetable CSA shares to customers this season. Shares last for 24 weeks and consist of a variety of fruits and vegetables. Full shares include 8-10 items per week, depending on the season. Half shares have 4-5 items per week. Customers can opt for pre-packed boxes at $600 (full share) or $300 (half share) or choose the pick-your-own option for $650 or $325, respectively. Gomez Veggie Ville is already taking sign-ups at the Saturday farmers’ market. Contact them by phone (518-686-5212) for more information.

Other farms offer more specialized CSA options, like 518 Farms’ mushroom shares. Customers are sent a rotating list of available mushrooms two days before market day and can choose their mix to pick up on Saturdays. There is a small (½ lb per week for $140) or large (1 lb per week for $260) option; both run for 13 weeks. For more information, visit 518 Farms’ website or inquire at the winter market.

Sowing the Seeds for a New Season

Walking around a farmers’ market, you see tables neatly displayed with mountains of produce. There is a long journey before produce lands on market tables and then, eventually, your table. Farmers are on a tight schedule to do all they can to make sure their crops flourish. Now that we are deep into winter, we asked local farmers how they are preparing for this year’s growing season.

Laurie Kokinda, owner of Kokinda Farm, says, “It’s the hardest time of year, in terms of grunt work.” Farms are working tirelessly to sanitize their greenhouses and tunnels and repair and order new equipment. Farms are starting their first seedings like tomatoes, alliums, and head lettuce. This year, many farmers ordered their seed supply earlier than usual due to Coronavirus-related increases in demand as well as mail delays. Paul and Sandy Arnold, owners of Pleasant Valley Farm, note, “Normally, we can get seeds in the day after we order. This year, we’re waiting weeks!”

Local farms often choose to work together to share resources. Pleasant Valley Farm’s Sustainable Farmers’ Network Group is hard at work in the mid-winter, bulk-ordering supplies so that farms may share discounts. Gomez Veggie Ville works with Denison Farm to get this year’s supply of organic potato seeds. And, for the first time, they will work to grow ginger. “I am learning how to grow ginger well in our climate. Hopefully, if it works out, we’ll be able to bring some to the market in September,” says Efrain Gomez.

Owl Wood Farm is taking this year’s seed shortages as an opportunity to try a new practice: seed saving. “We’ve wanted to save seeds that aren’t offered commercially, like tomato heirloom varieties and Abenaki flint corn, for a while. It involves a lot of work and isn’t very economical; you have to dedicate a new plot of land and grasp a whole new knowledge base,” says Mark Bascom. “But we see that seed saving is important this year especially.”

Squash Villa Farm (formerly Squashville) is trying not just a new crop or practice but also a whole new land plot after moving farms in 2020. “There’s lots of anticipation! As soon as the snow melts, I’m eager to walk the new land and just get a feel for what it’s like to step into the soil,” says Himanee Gupta-Carlson.

Keep it simple with soups from scratch

Whether you spend your days working from home or out and about, these long winter months are hard on us all. What could be more comforting than a warm bowl of soup full of fresh and nourishing ingredients after a long day? Soups are generally healthful with benefits including high nutritional value and low fat. They are also easy to prepare, inexpensive, and delicious!

January is National Soup Month, so we encourage you to put together a simple soup by stocking up on vegetables, meats, and herbs at Saturdays’ farmers’ market. You will be all set to enjoy a satisfying meal on Sunday or a busy weeknight when you are low on time. Soups are easy to customize to your liking; make a simple soup a bit heartier with some noodles, beans, or rice. Or if you’re looking for something light, you can keep it basic with broth and vegetables. Just follow this introductory method and tailor it to your preferences and available ingredients.

Start with stock – preferably homemade, by simmering chicken or beef leftovers in water, or utilize vegetable parts like onion skins, root vegetables, and herbs. A good quality stock can make a good soup great! Then choose your aromatics such as carrots, celery, onion, garlic, leek, etc. For a little smokiness, add an item like a hambone or bacon. Saute your aromatics in a big stockpot with oil or butter until softened, then stir in herbs and spices to enhance the flavor. Bay leaves and thyme rarely goes wrong.

Add a carb if desired, like vermicelli or potatoes. And then, lots of vegetables to add nutrition and bulk to your soup. Seasonal vegetables to consider are kale, chard, and mushrooms. Add the stock and let simmer until ingredients are tender. You can optionally puree your soup after simmering for a silky smooth finish. Finally, add any extra meats, garnishes, and flavorings (like cream, lemon juice, or even hot sauce) for added fullness and flavor.

We’re sharing a recipe aptly called “Whatever Soup”, because it lets you use whatever you have in your pantry. It features produce from Gomez Veggie Ville’s “soup bags,” which you can pick up every Saturday at the farmers’ market. If you pick up a soup bag from the market, you’ll have several options, including carrots, onions, beets, potatoes, turnips, and cabbage.

Psst… Some of the best things happen on Wednesdays

Weekends are market days for many farmers. But the Saratoga Farmers’ Market would like you to let you in on a secret – there’s a midweek market, as well.

Tucked into a corner of the Wilton Mall parking lot is the Wednesday market, featuring about 15 local farmers and prepared food vendors. From 3 p.m. to 6 p.m., they offer eggs, fresh produce, plants, baked goods, and prepared foods.

“It’s our best-kept secret,” says market board president Beth Trattel. “A simple way to pick up the freshest foods in a safe, no-fuss environment.”

In years past, the market association promoted its Wednesday market as a family-friendly space to gather for music, children’s games, and food purchases. This year, with COVID-19 restrictions on public gatherings in place, live music and games are on pause. But farmers are still coming.

Who’s there and what are they bringing? Here’s a snapshot.

As you enter the market from the former Bon Ton parking lot, flowering plants and other seedlings from Burger Farm greet you. Nearby, Shushan Valley Hydro Farms offers hydroponically grown herbs and vegetables. Surrounding Shushan are baked confections from The Chocolate Spoon, casseroles from The Food Florist, and Mediterranean meals to go from Euro Delicacies.

Further into the market are more farmers: Owl Wood Farm and Gomez Veggie Ville with their colorful piles of vegetables; eggs, chicken, and more vegetables at Squashville and Green Jeans farms; mushrooms and lavender at 518 Farms; and apples and cider of both the sweet and hard type from Saratoga Apple. On another end, you’ll find My Dacha Slovenian Café with its meals-to-go offerings. And tucked in between other stalls are Saratoga Garlic with its pickled garlic and aioli offerings, Gifford Farms with produce and baked goods; and Mister Edge’s popular knife sharpening service.

More vendors will start attending as the state eases its COVID-19 restrictions.

For now, Wednesday remains a great space to get the fresh ingredients for one or two meals, perhaps a prepared meal for Friday, and a few sweet treats. Try carrots dipped in aioli , scrambled eggs with arugula, radishes and lettuce tossed in a salad, and more.
