Summer Berry Parfait

Serves: 1

Ingredients
*Ingredients currently available at the farmers’ market
● 6 oz vanilla Greek yogurt*
● 3/4 cup blueberries*
● 3/4 cup strawberries*, sliced
● 1/2 banana, sliced
● 1 Tbsp wheat germ
● 1/3 cup TogaNola Granola Clusters*

Instructions
Layer 1/4 cup strawberries, 1/4 cup blueberries, 1/3 container yogurt, 1/3 tablespoon wheat germ, 1/3 of the sliced banana, and about 2 tablespoons of granola in a large bowl. Continue to build the parfait, repeating the layers until all of the ingredients are used completely. Enjoy!

Blueberry Breakfast Cake

Serves: 8 to 10

Ingredients
*Ingredients currently available at the farmers’ market

For the cake:
● 3 large eggs*
● heaping ½ cup sugar
● 6 Tablespoons melted unsalted butter
● 1 cup small curd cottage cheese (or part-skim ricotta)
● 1 cup plain Greek yogurt*
● 1 teaspoon vanilla extract
● ¾ cup all-purpose flour
● ½ teaspoon salt
● 1¼ teaspoons baking powder
● 1½ cups fresh blueberries*

For the glaze:
● 1 cup confectioner’s sugar
● zest from 1 lemon
● juice from ½ lemon
● 1 Tablespoon plain Greek yogurt*
● ¼ teaspoon vanilla extract

Instructions

Cake:
1. Preheat the oven to 350 degrees. Lightly grease an 8-inch round cake pan that is at least 2 inches deep.
2. Beat together the eggs and sugar until smooth.
3. Add the butter, cottage (or ricotta cheese), yogurt, and vanilla to the eggs mixture. Beat until well combined.
4. Add the flour, salt, and baking powder, to the egg/cheese mixture stirring to combine.
5. Pour the batter into the prepared pan and scatter the blueberries evenly over the top.
6. Bake the cake for about 50 minutes, until the tester inserted into the cake comes out clean.
7. Remove the cake from the oven. Let it rest at room temperature for 30 minutes to firm.

Glaze:
8. Whip together the confectioner’s sugar, zest, juice, yogurt, and vanilla. Adjust liquid for the desired consistency.
9. Drizzle glaze over cooled cake.

Cucumber Salad with Greek Yogurt

Serves: 8

Ingredients
*Ingredients currently available at the farmers’ market
● ½ cup plain Greek yogurt*
● 3 Tablespoons white vinegar
● 1 Tablespoon sugar
● pepper to taste
● 4 medium cucumbers*, peeled and thinly sliced
● 1 small sweet onion*, thinly sliced and separated into rings

Instructions
In a large bowl, whisk the yogurt, vinegar, sugar, and pepper until blended. Add cucumbers and onion. Toss to coat. Refrigerate, covered for at least 4 hours.

Notes: The original recipe calls for sour cream in place of yogurt.

Popsicles for All

Serves: 6

Ingredients
*Ingredients currently available at the farmers’ market

Cucumber Lemon Pop:
● 2½ cup spring water
● 1 lemon, washed and thinly sliced, seeds removed
● 1 slender Asian cucumber*, thinly sliced

Yogurt Berry Pop:
● 1 cup plain Greek Yogurt*
● ½ cup lemonade*
● ½ cup strawberries*, chopped

Wine Pop (for grownups):
● 16 ounces strawberries*
● ½ cup sugar
● ½ cup water
● 1 cup wine* (rose or wine)

Instructions
1. Cucumber Lemon Pop: Insert lemon and cucumber slices into pop molds. Fill with water and let sit for one hour on counter. Freeze until solid.
2. Yogurt Berry Pop: Mix ingredients together. Pour into molds and freeze.
3. Wine Pops: Puree strawberries, sugar, water and wine. Once mixture is smooth, pour into pop mold. Freeze for 5-6 hours or overnight.

Strip Steak with Yogurt and Radishes

Serves: 4

Ingredients
*Ingredients currently available at the farmers’ market
● 2 1-inch boneless New York Strip steaks*
● 2 Tablespoons olive oil*, plus more for drizzling
● Kosher salt
● 3 Tablespoon unsalted butter
● 4 sprigs thyme*
● 2 garlic cloves, crushed
● 6 cardamom pods, lightly crushed
● 1½ teaspoons finely grated lemon zest
● 1 teaspoon finely grated lemon zest
● 1 teaspoon plus 1 Tablespoon fresh lemon juice
● 1½ cup plain Greek yogurt*
● 8 ounces radishes*, cut into wedges and slices
● 1 cup parsley* leaves with tender stems

Instructions
1. Let steak sit at room temperature 20 minutes before cooking.
2. Heat a dry large skillet over medium-high. Rub steaks with 2 Tablespoons oil. Season generously with kosher salt. Cook, turning several times until lightly charred 6-8 minutes. Pour off excess oil from the skillet. Add butter, thyme, garlic, and cardamon, and cook steaks, tilting skillet and basting with foaming butter, until medium-rare, about 3 minutes. Transfer steaks to a cutting board and let rest 10 minutes before slicing. Reserve pan drippings.
3. Mix lemon zest and 1 teaspoon lemon juice with yogurt in a small bowl, season generously with kosher salt.
4. Just before serving, toss radishes, parsley, and the remaining 1 Tablespoon lemon juice in a medium bowl. Season with kosher salt, drizzle with oil, and toss again to coat.
5. Swipe plate with seasoned yogurt and top with steak and radishes and sea salt.

Apple Kuchen

Serves: 12

Ingredients
*Ingredients currently available at the farmers’ market
Cake:
● ½ cup butter, room temperature
● ⅔ cup sugar
● 2 eggs*
● 2 teaspoons vanilla extract
● 1½ cup all-purpose flour
● 1½ teaspoons baking powder
● ¼ teaspoons salt
● 1 teaspoon apple pie seasoning*
● ½ cup Greek yogurt*
● 4-5 medium apples*

Topping:
● 3 Tablespoons sugar
● ½ teaspoon apple pie seasoning*

Glaze:
● 1 cup powdered sugar
● 1½ Tablespoons milk*
● ¼ teaspoon vanilla extract

Instructions
1. For Cake: Cream butter and sugar together until light and fluffy. Add eggs one at a time, add vanilla.
2. Combine flour, baking powder, salt, and cinnamon in a small bowl.
3. Alternating, add flour mixture and sour cream, starting and ending with flour. Mixing just until each addition is incorporated into the batter.
4. Lightly grease a 9 X 13 baking pan. Spoon batter into prepared pan.
5. Peel, core, and slice apples into thin slices. Place apples in a single layer across the top of the batter.
6. For Topping: Combine sugar and cinnamon. Sprinkle over top of apple layer.
7. Bake in a 350-degree oven for 40 minutes, until a toothpick inserted in the center comes out clean.
8. Remove cake from oven and let cool for 30 minutes.
9. For Glaze: Combine powdered sugar, milk, and vanilla, stirring until smooth. Drizzle over top of the cake. Serve cake still warm or can be served cooled.

Get ready to mushroom into a world of flavor at th Get ready to mushroom into a world of flavor at the Saratoga Farmers' Market! 🍄🌱 This week, we're thrilled to highlight the Mushroom Shop and their incredible selection of locally grown and harvested mushrooms. We spoke with owner's Jacob and Elysee to learn more.

Q: What are some of the health benefits associated with consuming mushrooms?

A: Mushrooms contain a multitude of medicinal compounds. The mushroom species Cordyceps militaris contains cordycepin, which increases your blood's ability to absorb and transport oxygen, improving exercise performance. Mukitake or Panellus serotinus possesses compounds that have shown in recent studies to improve liver function in people suffering from fatty liver disease. Reishi mushrooms improve immune health, warding off sickness and reducing inflammation. Other medicinal mushrooms include Turkey Tail, Chaga, Agarikon, Maitake, and Lions Mane.

Q: What inspired you to start selling mushrooms at the farmers' market?

A: We initially got our inspiration from a mushroom farm based in Tennessee called Mossy Creek Mushrooms. They have many videos on Youtube covering every aspect of operating a mushroom farm from building and maintaining equipment to harvesting and marketing mushrooms. Jacob has had an interest in growing mushrooms as a hobby for about eight years when he discovered a patch of oyster mushrooms growing in the wild. We got the opportunity to lease land in the beginning of 2021 and shortly after started selling at farmers’ markets.

Q: How do you recommend customers prepare and cook the mushrooms they purchase from you?

A: At our farmers markets we always provide printed recipes that utilize the mushrooms available during the current season. Like meat, mushrooms can be cooked in a variety of ways, such as sautéing, roasting, and grilling to create a flavorful dish. One of our recent favorites is a Spicy Crispy Lion's Mane Sandwich- a thick slab of Lion's Mane mushroom battered and fried on a toasted bun with spicy mayo and pickles. This is a delicious take on a chicken sandwich made entirely of whole, natural produce.
