Chicken Spinach Salad with Butternut Squash

Serves: 4

Ingredients

For the Vinaigrette:

  • ¼ cup olive oil
  • 3 Tablespoons cider vinegar*
  • 1 Tablespoon maple syrup*
  • ¼ teaspoon ground cinnamon

For the chicken and butternut squash:

  • 1 pound boneless chicken tenders or breasts*
  • 1 Tablespoon olive oil
  • 1 teaspoon oregano
  • 1 teaspoon paprika
  • 2 teaspoons olive oil
  • 2 cups butternut squash*, peeled and chopped
  • ½ teaspoon ground cinnamon

For the Salad:

  • 5 ounces of fresh baby spinach*
  • ½ cup raw pecan halves
  • ¼ cup golden raisins
  • 1 large green apple*, cored and sliced

Instructions

  1. For the vinaigrette: Whisk all the ingredients for the vinaigrette in a small bowl until smooth.
  2. For the chicken and butternut squash: Preheat the oven to 400 degrees.Place chicken in a casserole dish. Drizzle with 1 Tablespoon olive oil, and sprinkle with oregano, and paprika. Place the squash on a baking sheet. Drizzle with 2 teaspoons olive oil and ½ teaspoon cinnamon. Roast the squash and chicken in the oven for 25 minutes or until the squash is tender and golden brown. Continue to cook the chicken until cooked through.
  3. For the Salad: Place spinach in a bowl or on individual plates. Top with pecans, raisins, squash, chicken, and apples. Drizzle vinaigrette over salad.

Whatever Soup

Serves: 6 to 8

Ingredients

  • 4 Tablespoons of olive oil
  • 2 medium onions*, sliced
  • 3 garlic cloves*, sliced
  • 6 to 8 cups diced vegetables*(carrots, celeriac, chard, mushrooms, cabbage, parsnips, potatoes, turnips, winter squash)
  • 1½ pounds raw boneless chicken
  • 6 to 8 cups chicken stock
  • Salt and pepper to taste

Instructions

  1. Set a large Dutch oven or stockpot over medium-high heat and add 4 tablespoons oil. When the oil shimmers, add onions and garlic.
  2. Reduce the heat to a medium and cook, stirring occasionally, until the onions are tender, about 15 minutes.
  3. Place the chicken and vegetables in the pot. Add enough chicken stock to cover. Season with salt and pepper. Increase heat to high and bring to a boil, then reduce to a simmer.
  4. Cook until the flavors have come together and the vegetables are tender, about 20 minutes more. Remove raw chicken from soup when cooked, allow it to cool enough to handle. Shred and return it to the soup.
  5. Add more hot liquid if needed.
  6. Serve hot.

Mulled Apple Cider

Serves: 1¼ gallons

Ingredients
*Ingredients currently available at the Saratoga Farmers’ Market

● 1 gallon apple cider*
● 3 granny smith apples*
● 1 orange
● 1 Tablespoon allspice berries
● 5-7 cinnamon sticks
● ½ cup fresh cranberries
● ½ cup sugar
● 1 cup apple brandy* or other preferred alcohol beverage* (optional)
OR USE
● 1 packet Mulling Spices mix from Healthy Gourmet Kitchen or Muddy Trail Jerky*

Instructions
1. Pour the apple cider into a large pot over medium-high heat.
2. Dice the apples and toss them into the cider.
3. Peel the rind off the orange in large pieces and toss them in the cider.
4. Add the allspice berries, cinnamon sticks, and the cranberries.
5. Add sugar and stir it around to dissolve.
6. Bring the mixture to a low boil, then reduce the heat to low and simmer for 45 minutes to
1 hour. Add the brandy if using, then simmer for another 10 to 15 minutes. Serve warm.

Maple Syrup Pudding

Serves: 4

 

INGREDIENTS

*Ingredients currently available at the farmers’ market

  • ⅓ cup dark maple syrup*
  • 2 cups milk*
  • 3 Tablespoons corn starch
  • 1 large egg* yolk
  • 1 teaspoon vanilla
  • 1 Tablespoon butter*

 

INSTRUCTIONS

  1. Whisk syrup, milk, cornstarch, and egg in a saucepan. Cook on medium high heat for 8 minutes while continually whisking. Remove from heat and add vanilla and butter.
  2. Pour in 4 individual dishes. Refrigerate for at least 2 hours before serving.

 

NOTES:

Top with whipped cream:

1 cup whipping cream (heavy cream*)

3 Tablespoons maple syrup*

Beat cream until soft peaks begin to form. Add maple syrup and continue beating until stiff peaks form.

Simply Applesauce

Makes 4 cups 

Ingredients

*Ingredients currently available at the farmers’ market

  • 3 pounds McIntosh apples*, peeled and cored, peels and cores reserved 
  • 1 ½ cups water 
  • ¼ cup maple syrup*, plus extra to taste 
  • Pinch of ground cinnamon
  • Pinch of cardamom 

Instructions

  1. Bring reserved peels and cores and 1 cup of water to boil in saucepan over medium-high heat. Reduce heat to medium, cover and cook, mashing occasionally with potato masher, until mixture is deep pink, and cores have broken down, about 15 minutes. 
  2. While peels and cores cook, cut apples into quarters and place in large saucepan. Add maple syrup, cinnamon, cardamom, and remaining ½ cup water and bring to boil over medium-high heat. Reduce heat to medium, cover and cook, stirring occasionally with rubber spatula until all apples are soft and about half are completely broken down, about 15 minutes. Using potato masher, mash apples to desired consistency.  
  3. Transfer peel and core mixture to fine mesh strainer set over saucepan of mashed apple mixture. Using rubber spatula, stir and press peel and core mixture to extract pulp, discard solids. Stir to combine. Sweeten with extra syrup to taste.

  

Note:  If you can, find Boiled Cider and add ¼ cup to boost the apple flavor.

Summer Harvest Vegetable Soup

Makes 4 to 6 servings

Ingredients
*Ingredients currently available at the farmers’ market

  • 1 Tablespoon olive oil*
  • 1 onion*, chopped
  • Salt and pepper
  • 2 cups of peeled, diced tomatoes*
  • 1 medium zucchini*, chopped 
  • 1 cup green beans*
  • 2 cloves garlic*, minced
  • 4 cups chicken broth
  • 4 ears of corn*, kernels cut off the cob
  • ½ cup fresh basil*, chopped
  • ¼ cup grated parmesan cheese*, optional

Directions

In a large pot, heat the oil over medium high heat. Add the onion and a pinch on salt. Sauté for 5 minutes, until the onion is translucent.

Stir in the tomatoes, zucchini, green beans, and garlic with more salt the pepper.  Add the chicken broth. Bring to a boil then reduce the heat to a simmer. Stir in the corn, basil, and cheese (optional). Cook for another 3 to 5 minutes until the vegetables are tender. Enjoy!
