Super Bowl Snacking

With Super Bowl Sunday quickly approaching, the football fans might be thinking about the game, but we’re all looking forward to the Super Bowl snacks! The array of creamy dips, bite-sized snacks, and decadent desserts are certainly something to anticipate, even for those who aren’t big sports fans. Appetizers and finger food are the traditional spread for most, making for easy snacking between plays or the much-anticipated commercials. The farmers’ market has options to meet all your snacking needs for next Sunday. Get your shopping done at the Saturday market to incorporate fresh, locally made ingredients into your Sunday spread.

Whether you are cooking for a crowd or keeping it lowkey this year, we put together a few recipes that are sure to impress, using fresh ingredients from the market. And for the hardcore football fans looking forward to more traditional snacks, you can, of course, pick up plenty of wings or spinach and cheese for artichoke dip at the market too!

Fried Pickles

Kick off the game with some savory and sweet fried pickles. Mix 1 cup flour with 1 tbsp garlic powder, 1 tbsp Cajun spice, and ½ tbsp cayenne pepper. Preheat an air fryer to 400. Grab 2 cups of your favorite flavor of pickles from Puckers Gourmet (we’re using the Dilly Sweet pickles, but you can substitute whatever you like) and coat with the flour mixture. Place in a single layer in the fryer and spray with olive oil. Cook for 10 minutes, then flip and cook for 5 more minutes. Serve warm with your favorite dipping sauce.

Buffalo Goat Cheese Balls

If you’re craving something cheesy and a little unique, make some fried buffalo goat cheese balls. Add ⅓ cup of flour and a pinch of pepper to a medium bowl. Add one large beaten egg and 2 tablespoons of water to a separate shallow bowl. Add 1 ½ cups of panko breadcrumbs to another medium-sized bowl. Then your favorite flavor of goat cheese from Nettle Meadow or R&G Cheesemakers and roll it into 20-24 balls. Roll each ball in the flour, then dip in the egg mixture, and then cover in the panko mixture. Place the balls on a baking sheet and freeze for 20 minutes or until firm. Then heat 1-2 cups of oil in a large skillet over medium-high heat and fry the goat cheese balls in batches for 1-2 minutes until crispy brown. Remove and drain on a paper towel-lined surface. Serve hot with spicy buffalo dip from Argyle Cheese Farmer!

Apple Nachos

For dessert, try making apple nachos, which are easy to customize to your taste and perfect if you’re looking for something a little lighter after all the afternoon snacking. Just cut Fuji apples (or apple of choice) from Saratoga Apple into thin slices and arrange on a plate. Then drizzle about ¼ cup of melted peanut butter (we’re using Plain Jane creamy from Saratoga Peanut Butter Company) and ¼ cup of melted semi-sweet chocolate over the apples. Top with a handful of chocolate chips or some granola to serve.

Lion’s Mane Cakes with Tartar Sauce

Servings: Makes 6 lions mane cakes, enough to serve 3 adults as the main course

Ingredients
*Ingredients currently available at the farmers’ market

For the lion’s mane cakes

● 2 large eggs*
● 2-1/2 tablespoons mayonnaise
● 1-1/2 teaspoons Dijon mustard
● 1 teaspoon Worcestershire sauce
● 1 teaspoon Old Bay seasoning
● 1/4 teaspoon salt
● 1/4 cup finely diced celery*, from one stalk
● 2 tablespoons finely chopped fresh parsley*
● 1 pound Lions Mane*, chopped into small pieces
● 1/2 cup panko
● canola oil, for cooking

For the tartar sauce
● 1 cup mayonnaise
● 1-1/2 tablespoons sweet pickles*, diced small
● 1 teaspoon Dijon mustard
● 1 tablespoon minced red onion*
● 1-2 tablespoons lemon juice, to taste
● Salt and freshly ground black pepper, to taste

Instructions
For the lion’s mane cakes
1. Line a baking sheet with aluminum foil for easy clean-up.
2. Combine the eggs, mayonnaise, Dijon mustard, Worcestershire, Old Bay, salt, celery, and parsley in a large bowl and mix well. Add the Lions Mane and panko; using a rubber spatula, gently fold the mixture together until just combined. Shape into 6 cakes (each about ½ cup) and place on the prepared baking sheet. Cover and refrigerate for at least 1 hour. This helps them set.
3. Preheat a large nonstick pan to medium heat and coat with canola oil. When the oil is hot, place the cakes in the pan and cook until golden brown, 3 to 5 minutes per side. Be careful as oil may splatter. Serve immediately with tartar sauce or a squeeze of lemon.

For the tartar sauce
Mix all ingredients together in a small bowl. Cover and chill until ready to serve.

Popular Foods Fill Saratoga Farmers’ Market Stalls

Every year, certain foods find a following nationally among chefs, food writers, and other aficionados. These items often are nutritious, delicious, and add diversity to the daily diet. One place to find such foods is the Saratoga Farmers’ Market. Here’s a quick rundown of the top trending foods available at the market now:

Good for the Gut
At the Wednesday and Saturday markets, look for Saratoga Apple. Their table offers not only their well-known apples but also such products as their own apple cider vinegar, made from fermented apple juice. Apple cider vinegar has been credited with reducing cholesterol and lowering blood sugar levels. Try it in salad dressings or marinades.

One regular purveyor of probiotics is Puckers Gourmet Pickles. Look for them and their jars of fermented vegetables on Saturdays. They offer pickles, kraut, and kimchi — all of which give the body a healthy dose of probiotics, which are live microorganisms that promote healthy digestion.

Junbucha, a creation of Saratoga Urban Farm may also be found at the market on Saturdays. Jun is made by fermenting tea and honey with a SCOBY (Symbiotic Colony of Bacteria and Yeast), creating a naturally effervescent and tangy drink that contains prebiotics, probiotics, and amino acids.

Ugly Produce
New seasonal fruits and vegetables appear at the farmers’ market each week. There is one distinct difference between locally grown produce at the farmers’ market and what is found on shelves at the grocery store. Locally grown produce is not perfect, and people are finally embracing misshapen and a-symmetrical as totally edible.

Different Sources of Protein
Squashville Farm is looking forward to bringing goat meat back to the Wednesday market in June. This meat, described as an “ethical meat” by some, is delicious in stews, burgers, or on the grill. Also, look for bone broths at the Wednesday market from Slate River and Ramble Creek farms. Bone broth is being hailed for it’s nutritional value and immune boosting properties.

Mushrooms
And, finally, mushrooms. Mariaville Mushroom Men and Ramble Creek Farm are offering a wide variety of mushrooms, including shitakes, oysters, lion’s mane, chestnuts and others. These bites of goodness are filled with potassium, niacin, selenium, vitamin B, and carry a flavor and texture that is unbeatable. Try them sauteed with olive oil or butter, roasted with root vegetables, or stirred into a pasta.

Get ready to mushroom into a world of flavor at th Get ready to mushroom into a world of flavor at the Saratoga Farmers' Market! 🍄🌱 This week, we're thrilled to highlight the Mushroom Shop and their incredible selection of locally grown and harvested mushrooms. We spoke with owner's Jacob and Elysee to learn more.

Q: What are some of the health benefits associated with consuming mushrooms?

A: Mushrooms contain a multitude of medicinal compounds. The mushroom species Cordyceps militaris contains cordycepin, which increases your blood's ability to absorb and transport oxygen, improving exercise performance. Mukitake or Panellus serotinus possesses compounds that have shown in recent studies to improve liver function in people suffering from fatty liver disease. Reishi mushrooms improve immune health, warding off sickness and reducing inflammation. Other medicinal mushrooms include Turkey Tail, Chaga, Agarikon, Maitake, and Lions Mane.

Q: What inspired you to start selling mushrooms at the farmers' market?

A: We initially got our inspiration from a mushroom farm based in Tennessee called Mossy Creek Mushrooms. They have many videos on Youtube covering every aspect of operating a mushroom farm from building and maintaining equipment to harvesting and marketing mushrooms. Jacob has had an interest in growing mushrooms as a hobby for about eight years when he discovered a patch of oyster mushrooms growing in the wild. We got the opportunity to lease land in the beginning of 2021 and shortly after started selling at farmers’ markets.

Q: How do you recommend customers prepare and cook the mushrooms they purchase from you?

A: At our farmers markets we always provide printed recipes that utilize the mushrooms available during the current season. Like meat, mushrooms can be cooked in a variety of ways, such as sautéing, roasting, and grilling to create a flavorful dish. One of our recent favorites is a Spicy Crispy Lion's Mane Sandwich- a thick slab of Lion's Mane mushroom battered and fried on a toasted bun with spicy mayo and pickles. This is a delicious take on a chicken sandwich made entirely of whole, natural produce.
