Bringing Caribbean cuisine to Saratoga Farmers’ Market shoppers

How Vashti Ma’at and Leon Carr met isn’t quite about food. But how the 20-year friendship has grown to their partnership through Vashti’s Kitchen Delights is definitely about the food. Vashti’s Kitchen Delights is among the Saratoga Farmers’ Market’s new vendors. Ma’at and Carr bring the prepared meals and sides that Vashti’s Kitchen Delights features to market each Wednesday and Saturday.

Ma’at was born in Trinidad and Tobago, and Carr in Jamaica. Each emigrated to New York City with their families. Ma’at holds a degree in sociocultural anthropology, has trained as a pastry chef, and has had a career as a consultant. Carr has worked as an engineer and has run businesses. Vashti’s Kitchen Delights is an amalgam of their experiences and their fused Caribbean cultural cuisines.

Ma’at and Carr met in Queens around 2001. Carr owned and operated a cyber café and computer-repair business, and Ma’at had a malfunctioning laptop. After a series of jousts and jokes, she decided she could trust Carr to fix it, and Carr proved himself reliable. He allowed clients to use the cafe computers for free while their devices were being repaired. Ma’at became a regular. Carr learned she had a small catering business and hired her to provide breakfast for a business meeting.

“No one remembered what happened at the meeting,” he recalled. “But everyone remembered the food.”

And so it went. Vashti catered meals, and Leon helped develop the business. They moved to Amsterdam in 2006. Ma’at was employed through a grant-funded position, and when the grant ended in 2017, she decided to devote herself to cooking.

Vashti and Leon visited several area farmers’ markets. “We decided that, as caterers, such markets would offer potential customers the opportunity to sample our dishes and experience our cuisine,” she said.

Vashti’s Kitchen Delights’ offerings are dairy and gluten-free, with many vegan options. Ma’at gives many of them a Trinidad and Tobago touch through using such ingredients as coconut oil, all fresh herbs like cilantro, and spices like cumin and cinnamon. She adds a touch of fun by giving them names like the Sassy Pig (pork) and Salacious Hen (chicken).

Vashti often makes time to shop at other vendor stalls for ingredients for the business and the meals she and Carr enjoy on their own time at home. The conviviality defines the business and the relationships she and Leon build with customers and others.

They’re all about the food.

Take-out food offers a journey around the world (and a break from cooking)

From Europe to the Middle East, the Saratoga Farmers’ Market has authentic foods from around the world available for take-out every Saturday. So even though we all had to cancel our travel plans this past year, you can still get a taste of your favorite international foods. What’s better is that you can take a break from cooking and enjoy delicious meals prepared by people who love sharing their native cuisine.

Euro Delicacies offers various flavorful Mediterranean dishes like stuffed grape leaves (dolma), baklava, and stuffed peppers. Try their moussaka; a casserole layered with potatoes, ground sirloin, and caramelized vegetables with bechamel sauce. Or spanakopita; a Greek pastry filled with chopped spinach, cheese, onion, olive oil, and seasonings. Euro Delicacies began in Sarajevo by the Hrelja family, now sharing their Eastern European heritage with the Upstate New York community.

Giovanni Fresco has a selection of freshly made pasta, homemade sauces like alfredo and meat sauce, and entrees such as penne alla vodka and eggplant parmigiana. Some items can be purchased frozen as well so that you can stock up and enjoy fresh Italian food whenever you want. Giovanni Fresco was started in 2017 by Giovanni and Francesca, an Italian couple who moved to America with the hopes of bringing authentic and traditional Italian dishes to their new community.

Petra’s Pocket Pies makes savory pita pies, a dough stuffed with combinations of vegetables, meats, and cheeses. Owner Sabreen Samman was inspired to share flavors from her home country of Jordan and began selling her savory pastries at the farmers’ market in 2018. Samman uses a blend of Mediterranean seasonings for her food and offers American style options, like buffalo chicken and Philly cheesesteak.

My Dacha Slavonian Cafe makes various entrees like pierogies, lasagna, beef stroganoff, and cabbage stuffed with ground beef, tomato sauce, parsley, and rice. They offer a variety of homemade Slavic foods from Eastern Europe. Aladdin and Nataliya Kamel, from Egypt and Ukraine, blend their unique backgrounds to make classic dishes that reflect their home countries and their Italian cuisine knowledge.

Editor’s Picks: Favorite dishes not to miss at the market!
Euro Delicacies’ sweet potato salad is probably the best we’ve ever had. It’s made with steamed sweet potatoes and topped with walnuts, cranberries, and scallions, and tossed in an olive oil dressing. This dish is also vegan.

Giovanni Fresco has fried snacks that are a must-try. They make Italian-style arancini (fried rice balls) that are stuffed with cheese, meat, or vegetables. They also make American-inspired fried mac & cheese.

Petra’s Pocket Pies has a roasted chicken pita pocket with garlic aioli; a tasty comfort food that includes aioli sauce from Saratoga Garlic Company.

My Dacha’s lasagna is a Ukrainian take on traditional Italian comfort food.

Don’t forget the dessert!
Euro Delicacies has baklava, a Turkish dessert made from a sweet pastry of layers of filo filled with chopped nuts and sweetened and held together with syrup or honey. Their famous apple strudel is a version of a Mediterranean apple pie made with filo dough.

Giovanni Fresco makes traditional and Nutella tiramisu; an Italian dessert made of ladyfingers dipped in coffee, layered with a whipped mixture of eggs, sugar, and mascarpone cheese, flavored with cocoa.

My Dacha Slavonian Cafe’s sweet crepes are filled with raisins and cheese, or poppy seeds. They are the perfect dessert to follow any of their savory dishes. They also offer Neapolitan cake, tiramisu, and baklava.

Wood-fired Pizza Gets “Fired Up” at the Farmers’ Market

Wood-fired, artisan pizza might be one of the most perfect foods on the planet. Crispy, cheesy, full of flavor — but it has to be done right. Locals Tina Rafferty and Paul Dudka discovered that the best pizza begins with fresh ingredients and the right oven.

Rafferty and Dudka own Fired Up Pizza that ‘opened shop’ at the Saratoga Farmers’ Market just 3 months ago. In that short time, Fired Up has become well known for its breakfast pizza and classic pepperoni, among other 10” specialty pies available every Saturday.

For Rafferty and Dudka, Fired Up Pizza is a pop-up pizza shop and retirement plan all-in-one. “I love the positivity at the farmers’ market,” says Rafferty. “As a new business, it’s a great place to offer and perfect our products, and customers love to watch their pizzas being prepared.”

At the farmers’ market, Dudka runs their custom-built, wood-fired pizza oven just outside the mall entrance. Dudka burns hardwoods to keep the oven at a constant 600 degrees no matter the weather. For him, this temperature guarantees the perfect, crisp crust with the right amount of char. Meanwhile, just inside the building, Rafferty creates pizzas made to order.

“We truly enjoy working together,” said Rafferty on beginning a business with her boyfriend. “And, we both love the farmers’ market,” she adds.

Pursuing a pizza business has meant a lot of trial and error for the couple. One of their biggest challenges has been perfecting their dough recipe to a consistency that, when dusted with cornmeal, will come off a peel without sticking. A ‘peel’ is the shovel-like tool used to slide the pizza into and out of the oven. Rafferty and Dudka have also had to experiment with cook times and temperature while getting to know their wood-fired oven.

Despite these challenges, Rafferty and Dudka’s goals have remained the same: to offer a great artisan pizza with high-quality, locally sourced ingredients.

What’s next for Fired Up Pizza? “We’re always experimenting and taste-testing,” explains Rafferty. “We are looking forward to expanding our offerings to calzones and pizza rolls in the future,” she says. The couple hopes to attend more local events and to offer catering options for private parties and gatherings in the near future. But, for now, you can find them at the Bow Tie entrance at the Wilton Mall serving up fresh pizzas to hungry shoppers every Saturday.
