Peak-of-the-Season Salad with Walnut Oil Vinaigrette

Serves 6-8
Prep & assembly time: 25 mins

Ingredients
*Ingredients currently available at the farmers’ market

For the vinaigrette:
● 1 1/2 Tbs. sherry vinegar
● 2 small shallots*, finely diced
● salt and freshly milled pepper
● 1 teaspoon Dijon mustard
● 6 Tbs. roasted walnut oil or a mixture of walnut and olive oils

For the salad:
● Local, seasonal baby greens, such as baby lettuce*, radicchio*, arugula*, or mesclun*
● Microgreens* or shoots*
● Assorted radishes*, including watermelon radish, sliced
● grated carrots*
● sliced cabbage*
● crumbled goat cheese* (optional)

For the toasted walnuts:
● 1/2 cup walnuts
● 1 tbs butter*

Instructions
To make the vinaigrette, combine vinegar, shallots, and 1/4 tsp salt in a bowl and let stand for 15 minutes. Stir in the mustard, then add the oil. Whisk well until the dressing is thick and smooth. Season with salt and pepper.

To make the toasted walnuts, warm a heavy-bottom skillet and melt the butter. Add the walnuts and stir until coated in the melted butter and slightly browned. Watch closely as they can burn easily!

Assemble the salad in the largest bowl you have. First toss the greens, microgreens, and shoots together, then top with grated carrot, sliced cabbage, and slices of radishes. Add crumbled goat cheese and toasted walnuts, then drizzle the dressing on top and serve!

Obatzda (Bavarian beer cheese spread)

Recipe adapted from Craft Beering
Yield: 6 portions

Ingredients
*Ingredients currently available at the farmers’ market
● 8 oz camembert*, cut in small pieces (or other soft, ripe cheese)
● 8 oz spreadable cheese*, any kind
● ⅓ cup butter, cut in small pieces
● 2 ½ tsp paprika
● 2 tsp ground caraway seed
● Salt and pepper, to taste
● ¼ cup Sixteen Days Oktoberfest beer* (or other lager or pilsner)
● ⅓ cup shallots*, finely diced
● 2 Tbsp + 1 handful scallions*, finely chopped

Instructions
1. Bring the camembert, spreadable cheese, and butter to room temperature.
2. In a mixing bowl, add the two cheeses, butter, paprika, caraway seeds, salt and pepper, and 2 Tbsp of beer and press using a fork until well mixed together. Add more beer until you reach a spread-like, but not runny, consistency.
3. Cover and refrigerate for at least 3 hours to firm up.
4. When you are ready to serve, take the dip out of the refrigerator. Run the diced shallots under water in a strainer and dry off with a paper towel before using. Add the shallots and 2 Tbsp of scallions to the dip and fold until they are well incorporated.
5. Garnish with the rest of the scallions. Serve with pretzels, radishes, or rye bread.

(One Pan) Chicken Breast and Carrots

Serves 4
Total time: 1 hour

Ingredients
*Ingredients available at the farmers’ market
● 4 (10 to 12 ounce) bone-in split chicken breasts*, trimmed
● 2 ¼ teaspoons kosher salt, divided
● Olive oil*
● 1 shallot*, thinly sliced
● ¼ teaspoon red pepper flakes
● 1 ½ pounds carrots*, peeled and sliced on bias, ¼ inch thick
● ½ cup water
● 2 teaspoons lemon juice
● 3 teaspoons fresh mint*, minced

Sweet Potato Salad with Apples, Raisins and Shallots

Serves 6-8

Cook and prep time: 20 minutes

INGREDIENTS

*Ingredients currently available at the farmers’ market

  • 4 cups sweet potatoes*, peeled and cut into ½” cubes
  • 2 tart apples*, peeled, cored and chopped
  • ½ cup raisins
  • ½ cup pecan pieces, toasted (optional)
  • Juice of 1 orange
  • Juice of 1 lime
  • 2 Tablespoons white wine vinegar
  • 1 Tablespoon Dijon mustard
  • 1 shallot*, finely chopped
  • salt & freshly ground black pepper, to taste
  • 1⁄3 cup olive oil

DIRECTIONS

  1. To cook the sweet potatoes: In a large skillet, warm the olive oil over medium heat. Add the chopped sweet potatoes and toss to coat. Once the pan is sizzling, add a scant ¼ cup water, then cover the pan and reduce heat to low to avoid burning the contents. Cook, stirring occasionally until the sweet potato is tender and cooked through, about 10 minutes. Allow to cool slightly.
  2. Mix the sweet potatoes, apples, raisins, pecans, and shallots in a large bowl.
  3. Combine the juices, vinegar, mustard, garlic, salt and pepper in a small bowl.
  4. Whisk together, then add the oil in a thin stream, whisking constantly.
  5. Pour over the salad, toss well to combine well, then refrigerate overnight before serving.

Grated Carrot Salad

Serves: 6

 

INGREDIENTS

*Ingredients available at the farmers’ market

  • 2 Tablespoons white balsamic vinegar
  • 2 Tablespoons chopped fresh tarragon*
  • 1 Tablespoon minced shallot*
  • 1 teaspoon honey*
  • ⅛ teaspoon cayenne pepper
  • ¼ cup olive oil*
  • 1¼ pound carrots, peeled and shredded*
  • 1 cup chopped fresh parsley*

 

INSTRUCTIONS
In a large bowl, whisk together the vinegar, tarragon, shallot, honey, and cayenne. Let sit for 10 minutes. Whisk in the oil until emulsified, then add the carrots and parsley. Stir until evenly coated. Season with cayenne pepper. Serve or refrigerate for up to 24 hours.
