*Ingredients currently available at the farmers’ market
- 1 lb ground beef*
- 1½ -2 c grated cheese (Argyle Cheese Farmer Mercy* is a favorite)
- 1 quart potatoes*
- 1 packet seasoning mix*
Brown the ground beef. While the beef is cooking, thinly slice the potatoes and grate the cheese.
Once the beef is browned, add 1 cup water and the seasoning packet. Stir in the potatoes.
Cover and cook over low to medium heat for 10-15 minutes, stirring occasionally until the potatoes are ‘fork tender’.
Turn off heat and stir in the cheese until melted.
